We love the Butter Chicken mix from Asian Home Gourmet. We used to eat it regularly, with plenty of sticky white rice, before we started keto. Fortunately it’s reasonably keto-friendly, so we’ve simply dropped the rice and included some baby spinach to add a little bulk. It’s also quick and easy to make (all in one pot) for those nights when you’re in a rush.
Ingredients:
- 300 g (oz) of raw chicken breasts, diced
- 30 ml (1 fluid oz) of olive oil
- 130 g (4.6 oz) of raw onions, diced
- 100 g (3.5 oz) of raw baby spinach
- 110 ml (3.7 fluid oz) of cream
- 110 g (3.9 oz) of tomato puree
- 1 packet (50 g or 1.8 oz) of Asian Home Gourmet Butter Chicken Indian Spice Paste
Recipe:
- Heat the oil in a saucepan over a medium heat.
- Add the onions, and fry for approximately 3 minutes until softened.
- Add the spice paste and the tomato puree, and fry for another couple of minutes.
- Combine the cream with an equal amount of water, and add to the pan. Stir to combine.
- Add the diced chicken to the pan and bring everything to the boil.
- Turn the heat down to low and simmer for approximately 12 minutes, until the chicken is cooked through.
- Add the baby spinach and stir through.
- Serve immediately.
