Cheesies

We read about cheese crisps in a number of places when we started keto, and initially we were dubious about whether these would turn out the way the photos captured them – solid and crunchy. We were so happy the first time we made them and confirmed that the photos we had seen were accurate!

These really are something special for cheese-lovers, and they are so quick and easy to make. Yum yum yum!

Another variant we use is putting a mini Babybel cheese on a plate in the microwave and cooking on high for approximately 50 seconds. The taste is slightly different from the crisps made with cheddar, but they are just as nice.

Ingredients:

  • 30 g of cheddar cheese, grated (we use colby)

Recipe:

  1. Place the cheese onto a piece of baking paper in three even piles (spread out over the size of a dinner plate).

  3. Put the baking paper into the microwave and cook on high for approximately 1 1/2 minutes.
  4. Remove from the microwave and let the cheese settle for a minute before removing from the paper.
  5. Enjoy!
