Cheesy English Muffins

This recipe, which we found here, was the first time we had tried cooking with coconut flour.

We found the end result reasonably dry, and the coconut flavour was a bit too strong for us. However, if you like quite a strong coconut flavour you might really enjoy these.

Ingredients:

  • 65 g (2.3 oz) of butter, melted
  • 45 g (1.6 oz or 1/3 cup) of coconut flour
  • 4 eggs
  • 1/4 tsp of sea salt
  • 1/4 tsp of black pepper
  • 1/4 tsp of baking powder
  • 75 g (2.6 oz) of sharp cheddar cheese, grated

Recipe:

  1. Preheat oven to 200 C (390 F).
  2. Brush a muffin tray with a little of the melted butter.
  3. Beat together the eggs, butter, salt and pepper.
  4. Add the coconut flour and baking powder, whisking into the batter until there are no lumps.
  5. Stir in the cheese.
  6. Spoon the batter into 6 muffin moulds and smooth the tops.
  7. Bake for 15 minutes or until firm.
  8. Let cool completely.
  9. Store in the fridge.
