This is based on this recipe that we found on reddit. It is very simple to make, easy to clean up after (since it is all made in one pan), and very yummy. It makes a great dish for weekend brunch.
Ingredients:
- 90 g (3.2 oz) of raw tomatoes, sliced
- 4 eggs
- 50 g (1.8 oz) of shaved peppered ham
- 90 g (3.2 oz) of grated mozzarella cheese
- 18 g (0.6 oz) of butter
Recipe:
- Melt the butter in a pan and add the tomato slices. Cook for a couple of minutes, turning once.
- Add salt, pepper and any other spices you may want.
- Crack the eggs on top of the tomatoes.
- Add the ham on top of the eggs, and sprinkle the mozzarella cheese on top of everything.
- Put a lid over the pan, lower the heat, and let everything simmer until the cheese melts.
- Put the pan under the grill for a minute at the end to brown the cheese (this is optional).
- Cut into pieces (one egg per piece) and serve with your favourite hot sauce. Makes two servings of two eggs.
