When we first started keto we couldn’t wait to try this bread as we had read so many comments about how great it was. We saw lots of different recipes, but ended up going with this one.
The bread turned out to be a great disappointment – neither of us liked it. I would go so far as to say that I had to force myself to swallow it. I don’t think it helped that the brand of peanut butter we used had an unpleasant aftertaste (something we only discovered afterwards when we tried the peanut butter on its own). We should probably try it again with better peanut butter, but we’re still a little scarred by our first experience.
Ingredients:
- 1 cup of smooth, natural peanut butter
- 3 eggs
- 1 Tbsp of vinegar
- 1/2 tsp of baking soda
- 1/4 tsp of salt
- 1 packet of sweetener (optional, I used Splenda)
Recipe:
- Preheat the oven to 175 C (350 F).
- Blend the peanut butter and the eggs until smooth.
- Add in the remaining ingredients.
- Pour into a sprayed loaf pan and smooth the top.
- Bake for 30-40 minutes.
- Let the loaf cool before slicing it (it should make approximately 8 slices depending on how thick you want it).

I just made this exactly like it says and it was very bland and dry no flavor at all. I thought because of the pb it would taste like it because I love pb. Disappointed sorry
Use 1 tsp apple cider vinegar instead of 1 tbsp vinegar
I add 1 tsp pumpkin pie spice to mine. Love it!
