Peanut Butter Cheesecake Bites

I made these cheesecake bites using a slightly modified version of the recipe here.

In the original recipe the balls are rolled in shredded coconut, which I left off because I’m not a big fan of coconut. This meant the bites were a bit stickier than they would otherwise have been, but this stickiness decreased the longer they were refrigerated. I also replaced the 1/4 cup of artificial sweetener that was in the original recipe with liquid stevia to cut down on carbs (the liquid stevia I used had none).

Overall the bites weren’t quite as good as I’d hoped they would be, but my hopes were probably unrealistically high. The were definitely tasty though, and were very (almost too!) easy to snack on.

low carb peanut butter cheesecake bites - suitable for keto, paleo, atkins diet

Ingredients:

  • 225 g (8 oz) of cream cheese, softened
  • 120 g (4.2 oz or 1/2 cup) of soft peanut butter
  • 20 drops of liquid stevia
  • 1/2 tsp of ground cinnamon
  • 1 tsp of vanilla extract

Recipe:

  1. Mix all the ingredients in a medium-sized bowl with an electric mixer, scraping down the sides of the bowl as needed.
  2. Chill the mixture in the fridge for approximately 30 minutes.
  3. Roll the mixture into small balls (approximately 20 to 30), and refrigerate for another hour or two before serving.

  1. I used Maranatha Chocolate Peanut Butter, adds more carbs but gives a Mexican hot chocolatey taste!

  3. how many of these equal a serving? You have 16 net carbs so I was wondering how many equaled 16 net carbs. If your trying to keep carbs below 30 per day that’s almost half your carbs in one snack so I was thinking maybe that was for the whole recipie…..which you would eat all at once.

  4. What brand of cream cheese do you use? All the brands I find are 2g carbs a serving, so for 8oz, 16g carbs total for a brick. 🙁

  7. You are aware that cinnamon has carbs. A full teaspoon has 2g of carbs. So the half teaspoon in your recipe adds a full gram to the total carb value for the batch.

    • The 2 carbs you mention for a teaspoon includes 1.4 grams of dietary fibre. So the net carbs in half a teaspoon is less than a gram and the amount per serving is minuscule.

    I’m confused how you have 11 carbs i 1/2 cup of peanut butter. I’ve not found any sort of peanut butter that is less than 4 net carbs per two tablespoons. Half of a cup of peanut butter would be like 32 carbs. ???

    • I don’t remember what brand of peanut butter I used in this recipe originally, but the peanut butter I now use is even better carb-wise. It’s a local NZ supermarket brand (Pams, smooth no added salt version) and has 6.4 grams of carbs per 100g (which would make about 8g total carbs in this recipe). This sounds like less than you’ve been able to find, but I think the one you mention as having 4 net carbs per two tablespoons would work out to be 16 carbs per half a cup rather than 32 (since half a cup is 8 tablespoons).

        A natural peanut butter that only contains peanuts and salt probably would have less carbs than regular peanut butter.

  12. I used cinnamon, ginger and turmeric in powder and these spices povided an awesome flavor to the mix

    You’re patience is superlative- people read with your eyes twice- then question–also. We need to google our own conversions. Sounds critical, but if we do some of our own thinking we’ll soon be tweaking great recipes too.

  15. I want to make these but I’m considering 4 oz of real butter and the PB powder.. I would think it would lower the carbs even more and add more yearly fat but I’m just not sure if it will work.. I will save this and let you know.. 😁
