Whitebait Fritters

Whitebait is a Kiwi favourite, and it’s also very keto-friendly if you make the fritters without any flour (like the recipe below). So very good!

Ingredients:

  • 400 g (14 oz) of whitebait
  • 4 eggs
  • 60 ml (2 fluid oz) of olive oil
  • Salt and pepper
  • Juice of 2 lemons

Recipe:

  1. Rinse the whitebait in water (using a sieve) and blot dry with a paper towel.
  2. Whisk the eggs together, and add the whitebait.
  3. Season with salt and pepper and mix to combine.
  4. Heat the oil in a large frypan (don’t put all the oil in at once, just use enough to thinly cover the base of the pan and top it up as you go along).
  5. Add spoonfuls of whitebait mixture to the oil, each one the size of a fritter.

  7. Let the fritters cook on each side for approximately 2-3 minutes until the egg has set and the fritter is golden brown.
  8. Continue making batches until all whitebait has been used.
  9. Put the fritters onto two plates and serve with the lemon juice squeezed over them, and/or with a carb-friendly tartare sauce.
  10. One serving below is equal to half of the fritters.
