I absolutely love this cauliflower bake recipe, which I found here. It’s easy to make and it’s so versatile – you can have it for breakfast, lunch, or dinner, and as a meal on its own or as a side dish. I’m lukewarm on cauliflower by itself (I eat it because I know it’s good for me), but this recipe elevates the cauliflower to something that I want to eat regularly.
Ingredients:
- 460 g (16 oz) of raw cauliflower, chopped or cut into florets
- 1/4 cup (60 ml or 2 fluid oz) of cream
- 1 Tbsp of butter
- 3 eggs
- 1 1/2 cups (150 g or 5.3 oz) of grated cheddar cheese
- 1 pinch (about 1/8 tsp) of nutmeg
- Salt and pepper to taste
Recipe:
- Preheat the oven to 175 C (350 F).
- Cook the cauliflower until fork-tender (either covered in the microwave with a small amount of water, or steamed).
- Blend the cauliflower with the cream, butter, salt, pepper, and nutmeg. A stick blender works well, but you can use a regular blender or food processor. If you use a regular blender, let the mixture cool somewhat first. Warm ingredients are fine, but hot ones have the tendency to “explode” when blended with a lid on.
- Adjust seasonings to taste.
- Add the eggs and blend.
- Mix or blend in 1 cup of the cheese.
- Pour the mixture into a casserole or gratin dish, and sprinkle with the rest of the cheese.
- Bake for about 30-40 minutes, until the top is golden brown.
- Cut into pieces and serve.
