Cheesy Broccoli Casserole

This is another recipe from Linda’s Low Carb Menus here. It was reasonably easy to make, and was quite tasty (although could perhaps have done with a bit more cheese if you like your cheese). The recipe does a good job of making broccoli more palatable for those who don’t like it on its own.

Ingredients:

  • 225 g (8 oz) of frozen broccoli florets
  • 62 g (2.1 oz) of cream cheese, softened
  • 62 g (2.1 oz) of cheddar cheese, grated
  • 3 pieces of streaky bacon (approximately 50 g or 1.8 oz), chopped into small pieces
  • 2 green onions, chopped
  • Salt and pepper, to taste

Recipe:

  1. Preheat the oven to 175 C (350 F).
  2. Cook the broccoli for 4-5 minutes (microwave or steam) until just tender-crisp. Drain very well, and put into a greased oven dish.
  3. Cook the bacon pieces in a pan on the stove (using non-stick spray) until it is crispy.
  4. Mix together the cream cheese, cheddar, green onion, salt, pepper and bacon.
  5. Distribute the cheese mixture over the top of the broccoli.
  6. Bake for 20-30 minutes, until bubbly.
