We are so pleased we found this recipe for chicken nuggets.
Although it’s a bit fiddly and messy to make, it really is worth it. In fact it’s one of our favourite meals. The chicken is tender, and the cheese coating is nicely crunchy and very tasty. I made a lesser quantity than the original recipe (as I had less chicken available), but this didn’t seem to cause any problems.
Ingredients:
- 300 g (10.5 oz) of chicken breast
- 1 egg (you’ll only use approximately half of this)
- 60 g (2.1 oz) of almond meal/flour
- 220 g (7.8 oz) of grated cheddar cheese
- 20 g (0.7 oz) of grated parmesan cheese
- 1/2 tsp of paprika
- 1/4 tsp of salt
- 1/4 tsp of pepper
Recipe:
- Preheat the oven to 200 C (390 F).
- Cut the chicken into bite (nugget) sized pieces.
- Beat the egg with the salt and pepper.
- Add the chicken to the beaten egg and make sure the pieces are well coated.
- Mix together the almond meal, the cheeses, and the paprika.
- Coat the chicken pieces in the cheese mix and place on an oven tray lined with baking paper.
- Bake for approximately 20 minutes.
- Remove the tray from the oven. Separate the pieces and reshape the cheese coating while they are still hot (if desired).
