Bacon Wrapped Cheesy Chicken

This recipe, which we found here, is a staple in our house. It both looks and tastes like it should be harder to make than it is…so it would be great for serving at a dinner party!

Although the original recipe calls for toothpicks to hold the bacon together, I had some problems getting these out the first time I used them. So I now go without them and I haven’t had any problems with the bacon coming away from the chicken. I also use more cheddar cheese than the original recipe, as we love our cheese!

Ingredients:

  • 2 chicken breasts (approximately 300 g or 10.6 oz)
  • 6 strips of streaky bacon (approximately 150 g or 5.3 oz)
  • 10 g (0.4 oz) of cream cheese
  • 70 g (2.5 oz) of cheddar cheese, sliced

Recipe:

  1. Preheat the oven to 200 C (400 F).
  2. Season the chicken if desired.
  3. Wrap 3 pieces of bacon around each chicken breast (trying to get full coverage without overlapping).

  5. Spray a baking dish with non-stick spray and add the chicken breasts.
  6. Bake for approximately 12-15 minutes, then turn and bake for an additional 12-15 minutes. If you like your bacon crispy (like us) you may need to increase this cooking time slightly, depending on your oven.
  7. Remove the chicken from the oven and turn the oven to grill setting.
  8. Soften the cream cheese in the microwave for 10 seconds (if needed) and spread the cream cheese on the chicken.
  9. Add the slices of cheddar cheese on top.
  10. Put the chicken back in the oven and grill until the cheese melts and begins to brown (this doesn’t take very long so watch the chicken!)
  11. Remove the chicken from the oven, serve on a plate and enjoy!
