I came across these delicious looking photos of a meal in a reddit post several months ago. As there was no recipe posted with the photos, I thought that there were enough step-by-step photos for me to be able to try to build a recipe myself. Despite my limited culinary skills. I don’t know what I was thinking.
I came up with the recipe below and gave it a shot. It was all a bit of a disaster. Most of the cheese seeped out of the middle of my patties during cooking, and I made the patties too thick so that they took forever to cook. And I was so paranoid about undercooking them that I ended up overcooking them – they were dry and unappetising. Perhaps you can do better!
Ingredients:
- 400 g (14 oz) of beef mince
- 3 eggs, beaten
- 50 g (1.8 oz) of almond flour
- 60 g (2.1 oz) of cheddar cheese, sliced
- 170 g (6 oz) of streaky bacon
- 1 tsp of oregano
- 1 tsp of cajun
- Salt & pepper
- Non-stick spray
Recipe:
- Put the mince, eggs, almond flour, and spices into a bowl and mix together until well combined.
- Divide the mixture into 4 equal sized patties.
- Place half the cheese into the middle of 2 patties and top those patties with the remaining 2 patties. Press the edges of the top and bottom patties together to seal them.
- Wrap the strips of bacon around each set of patties so that the entire surface is covered.
- Spray a fry pan with non-stick spray, and heat to a medium temperature.
- Put the patties into the pan and cook for approximately 40 minutes, turning as needed to brown the bacon on all sides (as noted above, mine turned out very dry so this is probably too long).
- Serve!
