Chicken with Parmesan and Mayo Crust

We came across this recipe in this reddit post. We’ve tweaked it just a little bit, including replacing the garlic powder with a bit of chili powder to spice it up.

It’s quick, easy, and very tasty. We have it for dinner every couple of weeks and it’s always enjoyable. Note that the cooking time below is significantly less than suggested by some of the comments in reddit. I find that 30 minutes is more than enough to give the topping a little bit of crunch but leave the chicken breasts moist and tender.

Ingredients:

  • 2 chicken breasts (approximately 350 g or 12.3 oz)
  • 70 g (2.5 oz) of mayonnaise (I use Best Foods Real Mayonnaise)
  • 38 g (1.4 oz) of parmesan cheese, grated
  • 2 tsp of chili powder
  • Salt and pepper to taste

Recipe:

  1. Preheat the oven to 200 C (390 F).
  2. Spray a baking dish with non-stick spray and add the chicken breasts.
  3. Mix the remaining ingredients together, and smear the mixture liberally on top of the chicken breasts.

  5. Bake in the oven for approximately 30 minutes.
  6. Serve and enjoy!

  1. You should replace the chicken breasts with thighs to get a better piece of chicken. You will get more fat in it and more bang for your buck.

  2. I love this recipe! I coat the breasts with the mayo/cheese and then top the dish with crushed spicy pork rinds before baking. It adds a special layer of flavor! Thank you for sharing!
