The idea for these strips came from this reddit post – no full recipe was provided with the post so I developed the detail below myself.
The original idea calls for golden flaxseed, but as I couldn’t find any of this is New Zealand I just used regular ground flaxseed. It sounds like regular flaxseed has a darker colour than the golden variety, which explains why my end result looked less appetising than the strips in the reddit post. However, the taste was still good. I would definitely recommend serving the strips with a dip or dipping sauce as this adds moisture and lightens up the heaviness of the flaxseed.
Ingredients:
- 400 g (1 lb) of chicken breasts
- 1 egg
- 100 g (3.5 oz) of almond flour
- 100 g (3.5 oz) of ground flaxseed/linseed
- Canola oil for shallow frying
Recipe:
- Cut the chicken breasts into strips, approximately 6 cm (2.3 in) long and 1 cm (0.4 in) wide.
- Dip each strip into the almond flour, followed by the egg, followed by the flaxseed.
- Cover the bottom of a large frypan with oil and heat until hot.
- Fry the chicken strips (in batches if need be) until cooked – approximately 3 minutes on each side.
- Serve onto 2 plates and enjoy with your favourite sauce or dip.
