This pancake recipe comes from Mellissa at I Breathe I’m Hungry (original recipe here). We changed the sweetener to a liquid one, and we added strawberries and whipped cream for serving.
We were pleasantly surprised at how great these taste – they are ideal for a leisurely weekend brunch. They’re also very easy to make (although they are quite fragile when you’re cooking and trying to flip them…I’ve had a few shockers where they pancakes have ended up a bit mashed but they still taste good!).
Ingredients:
- 57 g (2 oz) of cream cheese
- 2 eggs
- 4 drops of liquid sweetener (I used EZ-Sweetz)
- 1/2 tsp of cinnamon
- 70 g (2.5 oz) of fresh strawberries
- 100 ml (3.4 fluid oz) of cream
Recipe:
- Cut the strawberries into small pieces.
- Whip the cream with two drops of the sweetener.
- Put the remaining ingredients (cream cheese, eggs, 2 drops of sweetener, and cinnamon) in a blender and blend until smooth.
- Let the mixture rest for 2 minutes so the bubbles can settle.
- Pour 1/4 of the batter into a hot pan greased with butter or non-stick spray. Cook for 2 minutes until golden, flip and cook 1 minute on the other side. Repeat with the rest of the batter.
- Serve with the strawberries and whipped cream (using two pancakes per serving).
