Cream Cheese Pancakes with Strawberries and Cream

This pancake recipe comes from Mellissa at I Breathe I’m Hungry (original recipe here). We changed the sweetener to a liquid one, and we added strawberries and whipped cream for serving.

We were pleasantly surprised at how great these taste – they are ideal for a leisurely weekend brunch. They’re also very easy to make (although they are quite fragile when you’re cooking and trying to flip them…I’ve had a few shockers where they pancakes have ended up a bit mashed but they still taste good!).

Ingredients:

  • 57 g (2 oz) of cream cheese
  • 2 eggs
  • 4 drops of liquid sweetener (I used EZ-Sweetz)
  • 1/2 tsp of cinnamon
  • 70 g (2.5 oz) of fresh strawberries
  • 100 ml (3.4 fluid oz) of cream

Recipe:

  1. Cut the strawberries into small pieces.
  2. Whip the cream with two drops of the sweetener.
  3. Put the remaining ingredients (cream cheese, eggs, 2 drops of sweetener, and cinnamon) in a blender and blend until smooth.
  4. Let the mixture rest for 2 minutes so the bubbles can settle.
  5. Pour 1/4 of the batter into a hot pan greased with butter or non-stick spray. Cook for 2 minutes until golden, flip and cook 1 minute on the other side. Repeat with the rest of the batter.
  6. Serve with the strawberries and whipped cream (using two pancakes per serving).
