This recipe, which we found here, was the first time we had tried cooking with coconut flour.
We found the end result reasonably dry, and the coconut flavour was a bit too strong for us. However, if you like quite a strong coconut flavour you might really enjoy these.
Ingredients:
- 65 g (2.3 oz) of butter, melted
- 45 g (1.6 oz or 1/3 cup) of coconut flour
- 4 eggs
- 1/4 tsp of sea salt
- 1/4 tsp of black pepper
- 1/4 tsp of baking powder
- 75 g (2.6 oz) of sharp cheddar cheese, grated
Recipe:
- Preheat oven to 200 C (390 F).
- Brush a muffin tray with a little of the melted butter.
- Beat together the eggs, butter, salt and pepper.
- Add the coconut flour and baking powder, whisking into the batter until there are no lumps.
- Stir in the cheese.
- Spoon the batter into 6 muffin moulds and smooth the tops.
- Bake for 15 minutes or until firm.
- Let cool completely.
- Store in the fridge.
